Because those turn out so perfectly, I didn’t want to change the flavors we already love. And these potato wedges come out beautifully. The best part of these crispy air fryer potato wedges, besides how delicious they are, is there is no need for greasy deep frying. 

What you need to make Potato Wedges in the Air Fryer

I use a Cosori 5.8 quart air fryer when I make this recipe. Because the wattages can be different depending on the type of air fryer used, you may have to adjust the cooking time by 2-3 minutes. If your oven doesn’t have an air fryer basket, you can place them on a small baking sheet.  Besides an air fryer, to make these homemade potato wedges, you will need:

4 medium Russet Potatoes or Yukon Gold Potatoes2 tablespoons Virgin Olive Oilteaspoon Paprika Powderteaspoon Kosher Saltteaspoon Garlic Powder½ teaspoon Black Pepper

Optional: Chili Powder or Cayenne Pepper

How to make Potato Wedges

To make this recipe, begin by rinsing and then cutting the potatoes into wedges, leaving the potato skin on. Then, in a medium sized bowl, let them soak in cold water for 25-30 minutes.  This will remove the starch and makes them crispy potato wedges.  CLICK HERE to grab the BEGINNERS BOOK of recipes for the Air Fryer!! After they have soaked, drain water and pat dry with paper towels, then return them to the bowl. Next, coat potatoes with a tablespoon olive oil, and then the seasonings. Then, spread the seasoned potato wedges into the air fryer basket, without overlapping.  Finally, return the basket to the air fryer and cook potatoes at 400 degrees Fahrenheit for 20-25 minutes. During the cooking process, shake the basket at the 10 minute mark. You can cut your potatoes into larger wedges, but then you may need to add 2-3 extra minutes for cooking time.   Garnish with fresh parsley and serve alone, or with ketchup, ranch dressing, buffalo sauce, or with your favorite sauce of choice. 

Can you make air fryer potato wedges ahead of time?

Because these potato wedges taste best when they are fresh out of the air fryer, if you have leftovers, store them in an airtight container. You can reheat them at 400 degrees for 3-5 minutes. 

Can I use larger potatoes?

Yes. Just cook the wedges in batches if they don’t all fit in the air fryer basket.

Do I have to soak the wedges in cold water?

Soaking the raw potato wedges before cooking helps them crisp while cooking. If you skip this step, they may not have a super crispy exterior.

What type of potato works best?

Russet potatoes are the best flavor and size for potato wedges. 

What else can I use to season potato wedges?
